Meal Prep Easy Vegetarian Enchiladas

Add these easy veggie-filled enchiladas to your next meal prep!

With only a few simple ingredients & steps, you can add a delicious & nutritious meal to your weekly meal plan!  Best part yet  – you can use up all those vegetables you intended to eat 🙂

Being a busy, working mom, I cherish my weekends, and don’t want to spend hours slaving away in the kitchen just for Monday to roll around again.  And as a dietitian, I don’t want to be running through the drive-through every night.

Enter —> Easy Meal Prep Veggie Enchiladas!!

These enchiladas aren’t just easy + delicious, they are nutritious & RD-approved!  They even follow my #terrificthree approach, with a healthy balance of complex carbohydrate (the whole-wheat tortilla), protein (beans & cheese) + veggies (lots of them!).

Here’s the recipe:

Makes 8 Servings

INGREDIENTS:

  • 8 whole grain tortillas
  • 2 cups of chopped veggies (any kind!)
  • 1.5 cups shredded cheese (your favorite flavor!)
  • 2 cups enchilada sauce (I buy canned sauce to simplify my life!)
  • 1-15 oz can black beans, drained & rinsed
  • Salt, pepper & cumin to taste

 

DIRECTIONS:

  • With light olive oil, sauté chopped veggies in a large skillet over medium heat & season with spices.
  • Transfer veggies to a mixing bowl and add beans, 1/4 cup cheese and 2 tbsp of enchilada sauce.  Mix well!
  • Spread 1/2 cup veggie filling mix down the middle eat tortilla and then fold, left over right.
  • Spread 1/4 cup enchilada sauce to bottom of 13×9 inch pan and place enchilada seam down. Repeating with remaining tortillas and filling.
  • Drizzle remaining enchilada sauce over the tortillas and sprinkle with remaining cheese.
  • Bake at 400 degrees Fahrenheit for 20 minutes until cheese is golden & bubbly!

Ready to give it a try?!  It may seem like a lot of ingredients and work at first, but I promise that it won’t take long!!  Best yet, you can’t mess this recipe up.  You can use WHATEVER ingredients for the “filling”  you want!!
